- a good all-round dressing for salad leaves

Ingredients:
1 clove garlic
25mls vinegar (sherry, white wine, cider or red wine vinegar)
75ml olive oil (or a mix of olive oil and vegetable oil)
3 tsp fresh herbs (thyme, rosemary, oregano, sage)
1tsp honey (or sugar)
1tsp wholegrain mustard
Method
Finely chop, grate or mince the garlic
Wash the herbs and pick the leaves from the stem. Finely chop.
Add the oil, vinegar, honey and mustard to a bowl and whisk. Keep whisking until the dressing has become thicker and paler
Taste, it may need more honey or sugar depending on the vinegar used.
Add salt and pepper to taste
Add more herbs if you prefer a stronger flavour
Alternatively, place in a jam jar with a tight lid and shake until blended!
Easier Version: Blend all the ingredients with a hand blender.
To serve:
Keep salad leaves whole and layer with the dressing. Also makes a good dressing for a potato salad.
This recipe makes enough for around 4 portions but can be doubled or quadrupled. It will keep well for a couple of weeks.
